Johnnycake
1 c Cornbread, crumbled
1 Egg, beaten
Mix until cornbread is wet. The mixture should hold its shape when molded into a cone.
Press into a frying pan over medium heat, a fork works well, or a spatula. When the bottom is golden brown, turn over. When cooked through, remove from heat and ENJOY!!! You can eat these with butter, salt and pepper like Gramps used to, or you can use something sweet like Caro Syrup, Chokecherry Syrup, Peanut Butter, Jam, Powdered Sugar, whatever you like. I personally like them plain! No butter, no nuthin'.
